Ingredients:
- 10 sheets of rice paper
- 200 g of hard cheese (such as cheddar, mozzarella or gouda)
- 100 g of cream cheese
- 1 small carrot
- 1 bell pepper
- 1 bunch of herbs (dill, parsley or cilantro)
- 1 egg (for breading, optional)
- Breadcrumbs (optional)
- Vegetable oil for frying
- Soy sauce or sweet chili sauce for serving

Step-by-step process for making spring rolls with cheese:
- Cut the hard cheese into thin strips. Grate the carrots or cut into thin strips. Cut the bell pepper into thin strips, finely chop the herbs. Mix the cream cheese with the chopped herbs.
- Pour warm water into a large bowl. Immerse each sheet of rice paper in the water for 10-15 seconds until it becomes soft and pliable. Place some cream cheese in the center of a softened sheet of rice paper, then add carrots, peppers, and a block of hard cheese.
- Fold the bottom edge of the paper first, then fold the sides and roll tightly into a roll.
- For a crispy crust, dip each spring roll in beaten egg, then roll in breadcrumbs.
- Heat a frying pan with vegetable oil and fry the rolls until golden brown on each side (about 2-3 minutes).
- Place the finished spring rolls on paper towels to remove excess oil. Serve hot with soy sauce or sweet chili sauce.
