Ingredients

  • Fresh or defrosted squid – 500 g
  • Corn starch – 3 tbsp. spoons
  • Wheat flour – 2 tbsp. spoons
  • Chicken egg — 1 pc.
  • Soy sauce — 2 tbsp.
  • Sesame oil — 1 tsp (optional)
  • Fresh ginger — 1 tsp (grated)
  • Garlic — 2 cloves (chopped)
  • Chili pepper — to taste
  • Salt — to taste
  • White pepper — to taste
  • Vegetable oil for frying

Step-by-step recipe

  • Clean the squid from the film, entrails and chord. Cut them into rings about 1 cm wide or into small pieces. If the squid is frozen, defrost it at room temperature first.
  • Put the squid in a bowl. Add soy sauce, sesame oil, ginger, garlic, a little white pepper and a pinch of salt. Stir and leave to marinate for 15–20 minutes. This will give the squid flavor and make it even more tender.
  • In a separate bowl, beat the egg. Add cornstarch and wheat flour. Mix until a smooth dough forms. The consistency of the batter should be similar to liquid sour cream – add a little water if necessary.
  • Heat the vegetable oil in a deep frying pan or wok to medium temperature (about 170 ° C).
  • Dip the squid rings in the batter and carefully place them in the oil. Fry in batches so as not to overload the pan.
  • Cook until golden brown, about 2-3 minutes. The squid fry very quickly – it is important not to overcook them, otherwise they will become tough.
