Ingredients
To make vegan cheesecakes with tofu and apple, you will need the following ingredients:
- 200 g tofu
- 1 large apple
- 2-3 tbsp. sugar (to taste)
- 1/2 tsp. salt
- 1 tsp vanilla extract
- 2 tbsp. corn starch or potato starch
- 4-5 tbsp. flour (wheat or any other of your choice)
- Sunflower oil
Step-by-step recipe for making vegan cheesecakes with tofu and apple
- Place the tofu on a paper towel, cover with another towel, and press lightly to remove excess moisture. Then cut it into small pieces.
- Peel the apple and grate it on a coarse grater.
- In a bowl, mash the tofu with a fork until smooth. Add grated apple and stir. Add sugar, salt and vanilla extract. Stir until smooth.
- Gradually add starch and flour, stirring after each addition, until the dough is thick enough to hold its shape.
- Lightly wet your hands with water to prevent the dough from sticking. Take small portions of the dough and roll them into balls, then press down lightly to form small patties.
- Heat a frying pan over medium heat and add a little oil. Fry the cheesecakes on both sides until golden brown, about 3-4 minutes on each side.
- Place the finished cheesecakes on a paper towel to remove excess oil.
Serve warm with any toppings you like: plant-based yogurt, syrup, fresh berries or fruit.
