Barley can be used to make not only porridge. This healthy ingredient is ideal for creating original dishes. In particular, salads, puddings and more are prepared from it. We at joy-pup offer several recipes for original pearl barley dishes.
Barley with vegetables and sesame
Ingredients:
- 1 cup pearl barley
- 2 glasses of water
- 2 tbsp. spoons of butter
- 1 onion (finely chopped)
- 2 carrots (cut into slices)
- 1 red pepper (chopped)
- 1 tbsp. spoon of sesame seeds
- Salt and pepper to taste
Preparation:
- Rinse the pearl barley and cook in salted water until tender.
- Heat the oil in a frying pan and fry the onion until golden.
- Add carrots and peppers, cook until vegetables are soft.
- Mix cooked pearl barley with vegetables.
- Roast sesame seeds and add them to the dish.
- Season to taste with salt and pepper.
Baked pearl barley with mushrooms and cheese
Ingredients:
- 1.5 cups pearl barley
- 3 glasses of water
- 300 g champignons (chopped)
- 1 onion (finely chopped)
- 2 cloves garlic (chopped)
- 1 cup grated cheese
- 2 tbsp. spoons of olive oil
- Salt, pepper, herbs to taste
Preparation:
- Boil the pearl barley in salted water until tender.
- In a frying pan, fry the onion and garlic in olive oil until translucent.
- Add mushrooms and fry them thoroughly.
- In a large bowl, combine cooked barley, mushrooms, onions, half the cheese and herbs. Stir.
- Pour the mixture into the pan and sprinkle the remaining cheese on top.
- Bake in an oven preheated to 180°C until golden brown.
Barley pudding with berries
Ingredients:
- 1 cup pearl barley
- 2 glasses of milk
- 1/2 cup sugar
- 2 eggs
- Vanilla and salt to taste
- 1 cup fresh berries (strawberries, raspberries, blueberries)
Preparation:
- Boil pearl barley in milk with added sugar until thickened.
- Cool and add beaten eggs, vanilla and salt.
- Place half the mixture in the mold, add the berries, then add the remaining mixture.
- Bake in the oven at 180°C until the pudding has set and turns golden.
Light salad with pearl barley and arugula
Ingredients:
- 1/2 cup pearl barley
- 1 glass of water
- 2 bunches of arugula
- 1 cucumber (diced)
- 4 tomatoes (diced)
- 50g feta cheese (diced)
- 2 tbsp. spoons of olive oil
- Juice of half a lemon
- Salt and pepper to taste
Preparation:
- Boil pearl barley in salted water until tender.
- Cool and toss with arugula, cucumber, tomatoes and feta.
- In a separate bowl, combine olive oil, lemon juice, salt and pepper.
- Pour the resulting sauce over the salad and mix thoroughly.
