Grilled corn and lime
Ingredients:
- 4 things. fresh corn
- 2 tbsp. spoons of olive oil
- Juice of one lime
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- Seasoning to taste (salt, pepper)
Step by step preparation:
- Remove outer leaves and fibers from corn, leaving only a few inner leaves for protection.
- In a bowl, mix olive oil, lime juice, cumin, paprika, salt and pepper. This will be the marinade for the corn.
- Brush each ear of corn generously with the prepared marinade.
- Preheat the grill to medium heat and place the corn on the grate. Cook for 10-12 minutes, turning occasionally to brown evenly on all sides.
- When the corn turns soft golden, remove it from the grill and serve hot.
Cream of fresh corn soup
Ingredients:
- 4 things. fresh corn
- 1 bulb
- 2 medium potatoes
- 2 tbsp. butter spoons
- 4 cups vegetable or chicken broth
- 1 cup milk
- Salt and pepper to taste
- Fresh herbs for garnish (parsley, cilantro or basil)
Step by step preparation:
- Remove the outer leaves and fibers from the corn, then carefully cut the kernels off the cob.
- Melt the butter in a small skillet and sauté the chopped onion until translucent.
- Add the corn along with the chopped potatoes and sauté for a few minutes.
- Pour in the vegetable or chicken broth, bring to a boil, then reduce the heat and simmer for about 15-20 minutes until the potatoes and corn are soft.
- Using a blender or immersion mixer, puree the soup until creamy.
- Add milk, stir, bring to a boil and cook for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with fresh herbs for garnish.
Salad with corn and avocado
Ingredients:
- 2 pcs. fresh corn
- 1 large avocado
- 1 large tomato
- 1/2 red onion (can be replaced with green onions)
- 1/4 cup chopped fresh cilantro or parsley
- Juice of one lime
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
Step by step preparation:
- Clean corn from outer leaves and fibers, cut the kernels from the cob.
- Transfer the corn kernels to a large bowl.
- Cut the avocado and tomato into cubes, finely chop the red onion and add everything to the bowl of corn.
- Sprinkle with cilantro or parsley.
- In a small bowl, mix lime juice, olive oil, salt and pepper. This will be the salad dressing.
- Pour dressing over salad and gently toss all ingredients together.
- Serve salad immediately to preserve freshness and flavor.
