Classic mushroom sauce
You will need:
- Champignons – 300 g
- Onion – 1 pc.
- Garlic – 2 cloves
- Butter – 50 g
- Cream 20% – 200 ml
- Flour – 1 tbsp. l.
- Salt and pepper – to taste
- Parsley – for decoration
Preparation:
- Cut the champignons into thin slices. Finely chop the onion and chop the garlic.
- Melt the butter, add the onion and fry until translucent, about 5 minutes. Add garlic and cook for another minute.
- Add mushrooms and cook until liquid has evaporated, about 10 minutes. Add flour and mix thoroughly. Pour in the cream, reduce heat and simmer, stirring, until the sauce thickens. Salt and pepper to taste.
- Serve the sauce hot, garnished with finely chopped parsley.
Mushroom sauce with wine
You will need:
- Porcini mushrooms – 200 g
- Shallots – 2 pcs.
- Garlic – 1 clove
- Dry white wine – 100 ml
- Butter – 30 g
- Cream 20% – 150 ml
- Thyme – 1 sprig
- Salt and pepper – to taste
Step-by-step preparation:
- Cut the mushrooms into small pieces. Finely chop the shallots and garlic.
- Melt the butter. Add the shallots and cook until soft, add the garlic and cook for another minute.
- Add the mushrooms and cook until the liquid has evaporated, add the wine and cook until it has almost completely evaporated.
- Add cream and thyme, reduce heat and simmer, stirring, until thickened.
- Salt and pepper to taste.
Serve the sauce hot, removing the thyme sprig before serving.
Mushroom sauce with soy sauce
You will need:
- Oyster mushrooms – 200 g
- Onion – 1 pc.
- Garlic – 2 cloves
- Soy sauce – 3 tbsp. l.
- Cream 20% – 100 ml
- Olive oil – 2 tbsp. l.
- Corn starch – 1 tsp.
- Water – 50 ml
- Salt and pepper – to taste
Step-by-step preparation:
- Cut the oyster mushrooms into slices, finely chop the onion, and chop the garlic.
- Heat olive oil over medium heat, add onion and fry until golden brown.
- Add garlic and cook for another minute.
- Add mushrooms and cook until liquid evaporates. Pour in soy sauce and cream, reduce heat and simmer, stirring, until thickened. In a small bowl, combine cornstarch and water and add to sauce, stirring until thickened. Salt and pepper to taste.
