Ingredients:

  • 2 medium eggplants
  • 100 g soft cheese
  • 50 g chopped nuts
  • 2 tbsp. spoons of olive oil
  • Salt and pepper to taste
  • Fresh herbs

Step-by-step preparation:

  • Cut the eggplants lengthwise into thin slices and salt them. Leave for 15-20 minutes to remove any bitterness, then rinse and pat dry with a paper towel.
  • Preheat the oven to 200 degrees. Place the eggplants on a baking sheet, brush them with olive oil and bake for 10-15 minutes until soft and golden.
  • In a bowl, mix soft cheese and chopped nuts. Season the mixture with salt and pepper to taste.
  • Spread a layer of the cheese and nut mixture on each eggplant slice, then carefully roll it up into a log. Repeat with the remaining slices.
  • Place the rolls on a baking sheet, brush them with olive oil and bake in the oven at 180 degrees for 10-15 minutes.

  • Fresh basil leaves

Step-by-step preparation:

  • Prepare the eggplants, cut them lengthwise into thin slices and fry in a frying pan with olive oil until golden brown.
  • Place a slice of mozzarella and a slice of tomato on each slice of eggplant. Salt and pepper to taste.
  • Carefully roll the eggplants into rolls.
  • Place the rolls on a baking sheet greased with olive oil and bake in the oven at 180 degrees for 10-15 minutes until the cheese has melted.
  • Serve the rolls garnished with basil leaves.
