Eggplant rolls with cheese and nuts
Ingredients:
- 2 medium eggplants
- 100 g soft cheese
- 50 g chopped nuts
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
- Fresh herbs
Step-by-step preparation:
- Cut the eggplants lengthwise into thin slices and salt them. Leave for 15-20 minutes to remove any bitterness, then rinse and pat dry with a paper towel.
- Preheat the oven to 200 degrees. Place the eggplants on a baking sheet, brush them with olive oil and bake for 10-15 minutes until soft and golden.
- In a bowl, mix soft cheese and chopped nuts. Season the mixture with salt and pepper to taste.
- Spread a layer of the cheese and nut mixture on each eggplant slice, then carefully roll it up into a log. Repeat with the remaining slices.
- Place the rolls on a baking sheet, brush them with olive oil and bake in the oven at 180 degrees for 10-15 minutes.

Ingredients:
- 2 medium eggplants
- 2 medium tomatoes, sliced
- 150 g mozzarella, cut into thin slices
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
- Fresh basil leaves
Step-by-step preparation:
- Prepare the eggplants, cut them lengthwise into thin slices and fry in a frying pan with olive oil until golden brown.
- Place a slice of mozzarella and a slice of tomato on each slice of eggplant. Salt and pepper to taste.
- Carefully roll the eggplants into rolls.
- Place the rolls on a baking sheet greased with olive oil and bake in the oven at 180 degrees for 10-15 minutes until the cheese has melted.
- Serve the rolls garnished with basil leaves.
