Light soups have long become part of every person’s diet. And in addition to traditional ingredients, you can add more tasty and interesting components to them. So, an excellent dish for the dinner table would be soup with shrimp and corn. We at joy-pup offer a simple recipe for such a dish.
Ingredients:
- 500 g shrimp, peeled
- 2 cups chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- 2 cups corn (you can use fresh or frozen)
- 1 cup cherry tomatoes, halved
- Fresh green onions and parsley for garnish
- Lemon slices for serving
Step-by-step preparation of shrimp and corn soup
- Heat olive oil in a large saucepan. Add chopped onion and saute until softened, about 3-5 minutes. Then add chopped garlic and fry for another 1-2 minutes.
- Add chicken broth, dried thyme, turmeric and cayenne pepper to the onions and garlic. Salt and pepper to taste. Bring to a boil, then reduce heat and let simmer for about 10 minutes to allow flavors to blend well.
- When the soup comes to a boil, add the corn and shrimp. Cook for another 5-7 minutes until the shrimp turn bright pink.
- Next, add the cherry tomatoes to the soup, letting them cook for just 1-2 minutes so that they soften a little but retain their shape.
Pour the soup into deep bowls. If desired, garnish with green onions or parsley and add lemon slices.
