Ingredients:

  • 2 bunches fresh parsley
  • 1 large onion
  • 2 cloves garlic
  • 2 medium potatoes
  • 1 liter vegetable broth
  • 200 ml cream (10-20% fat)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Lemon juice to taste (optional)
  • Sour cream or yogurt for serving (optional)

Step-by-step preparation of green soup with parsley:

  • Finely chop the onion and garlic, peel the potatoes and cut into small cubes. Wash the parsley, separate the leaves from the stems (the stems can also be used, they add flavor).
  • In a large saucepan, heat the olive oil over medium heat, add the onion and garlic, fry until translucent and soft, about 5-7 minutes, add the chopped potatoes and fry for another 2-3 minutes. Pour in the vegetable broth, bring to a boil.
  • Reduce heat and simmer until potatoes are tender, about 15-20 minutes, add parsley and simmer for another 2-3 minutes, until soft.
  • Remove pan from heat and use a blender to blend soup until creamy. Then return pan to heat, add cream, salt and pepper to taste. Heat it through, but do not bring to a boil.

When serving, you can add a little lemon juice, and garnish with sour cream or yogurt.
