Ingredients
For the test you will need:
- 500 g flour
- 100 g butter (warm)
- 100 g sugar
- 3 eggs
- 100 ml warm milk
- 7 g dry yeast
- 1 tsp. salt
- 1 tsp. vanilla extract
For filling:
- 100 g raisins
- 100 g dried apricots (chopped)
- 50 g nuts (chopped)
- Orange or lemon zest
- 50 g sugar
- 1 tsp. cinnamon
For the glaze:
- 100 g sugar
- 2 tbsp. l. water
- Lemon juice
Step-by-step preparation of brioche cake
- To prepare the dough, dissolve the yeast in warm milk. In a large bowl, combine flour, sugar and salt. Add eggs, oil, vanilla extract and dissolved yeast. Knead soft dough.
- Place the dough on the table, constantly adding flour. Knead it for about 10-15 minutes until the dough becomes elastic and begins to stick to your hands.
- Place the dough in a clean bowl, cover with cling film and leave in a warm place for 1-2 hours to rise in volume.
- To prepare the filling, soak the raisins and dried apricots in hot water for 10-15 minutes, then drain in a colander and dry. In a bowl, combine raisins, dried apricots, nuts, orange (or lemon) zest, sugar and cinnamon.
- After the dough has increased in volume, add the filling to it and knead gently. Divide the dough into several parts (depending on the size of the cake). Shape each part into a circle.
- Place the dough in the Easter cake pans, cover with a clean cloth and leave in a warm place for another 30-40 minutes.
- Preheat the oven to 180°C. Bake the cakes for about 30-40 minutes until they are golden and cooked through. To check readiness, you can use a wooden skewer: stick it into the cake, if it comes out clean, the cake is ready.
- To prepare the glaze, mix sugar and water in a saucepan, place it on the fire and heat until the sugar is completely dissolved. Add lemon juice.
Cover cooled cakes with frosting. You can also decorate them with nuts, meringue, and dried fruits.
