Ingredients:

  • 2 ripe avocados
  • 1 liter of chicken or vegetable broth
  • 1 onion
  • 1 clove of garlic
  • 1 small cucumber
  • 1 tablespoon of olive oil
  • 200 ml of low-fat cream (10-15%)
  • Half a lemon
  • A pinch of red pepper (optional)
  • Salt and black pepper to taste
  • Fresh herbs (cilantro or parsley) for garnish

Step-by-step preparation of avocado soup

  • Cut the avocado in half and remove the pit. Carefully remove the pulp with a spoon, trying not to damage the skin. Cut the pulp into large pieces and sprinkle with lemon juice so that the avocado does not darken.
  • Chop the onion and garlic finely. Heat the olive oil in a saucepan. Add the onion and fry it until translucent (about 3 minutes). Add the garlic and continue to cook for another minute, until it releases its aroma but does not burn.
  • Add chicken or vegetable broth to the pan and bring to a boil. Add the sliced ​​avocado and cucumber, simmer for 5-7 minutes, until the vegetables soften slightly.
  • Use an immersion blender or pour the soup into a regular blender and blend until smooth. Return the soup to low heat.
  • Pour the cream into the soup, stirring until the mixture is smooth. Add salt, black pepper and, if desired, a little red pepper for spice. Heat the soup through, without bringing it to a boil.

Before serving, garnish with fresh herbs and, if desired, small pieces of avocado or lemon wedges.
