Avocado soup is very tasty and healthy. It pleases with its rich taste, pleasant aroma, and also a large number of vitamins. We at joy-pup offer a recipe for avocado soup, which is very easy to make.
Ingredients:
- 2 ripe avocados
- 1 liter of chicken or vegetable broth
- 1 onion
- 1 clove of garlic
- 1 small cucumber
- 1 tablespoon of olive oil
- 200 ml of low-fat cream (10-15%)
- Half a lemon
- A pinch of red pepper (optional)
- Salt and black pepper to taste
- Fresh herbs (cilantro or parsley) for garnish
Step-by-step preparation of avocado soup
- Cut the avocado in half and remove the pit. Carefully remove the pulp with a spoon, trying not to damage the skin. Cut the pulp into large pieces and sprinkle with lemon juice so that the avocado does not darken.
- Chop the onion and garlic finely. Heat the olive oil in a saucepan. Add the onion and fry it until translucent (about 3 minutes). Add the garlic and continue to cook for another minute, until it releases its aroma but does not burn.
- Add chicken or vegetable broth to the pan and bring to a boil. Add the sliced avocado and cucumber, simmer for 5-7 minutes, until the vegetables soften slightly.
- Use an immersion blender or pour the soup into a regular blender and blend until smooth. Return the soup to low heat.
- Pour the cream into the soup, stirring until the mixture is smooth. Add salt, black pepper and, if desired, a little red pepper for spice. Heat the soup through, without bringing it to a boil.
Before serving, garnish with fresh herbs and, if desired, small pieces of avocado or lemon wedges.
