Merjimek Chorbasi is perhaps the most famous soup in Turkey. It is called the calling card of the country, and its special taste cannot be ignored. We at joy-pup tell you how to prepare this soup.
Ingredients:
- 1 cup red lentils
- 0.5 cups bulgur
- 1 onion
- 1 tbsp. tomato paste
- 1 tbsp. butter
- 2 liters of meat broth
- Salt
- Turkish spices
- Quarter lemon
- Fresh herbs for serving
Step-by-step preparation:
- Place the washed lentils in a saucepan with meat broth, put on the fire and let it boil.
- Add the bulgur, reduce the heat to low and simmer for about half an hour until the cereal is cooked through.
- Fry the finely chopped onion in butter. Add tomato paste and fry. Next, add a little meat broth and let the mixture boil for a couple of minutes.
- Add the whole mixture to the soup, add salt, spices and simmer for about 10 minutes.
You can puree the soup in a blender or leave it as is. Before serving, decorate it with herbs.
