Carrot-orange salad with mint and nuts
Ingredients:
- 2 medium fresh carrots
- 2 oranges
- 1/4 cup chopped nuts (walnuts or almonds)
- Fresh mint (to taste)
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
Step by step preparation:
- Peel the carrots and cut them into thin strips or grate on a coarse grater.
- Pour hot water over oranges, then pat dry. Remove the zest from one orange and remove the segments from both. Remove the skin and cut the slices into small pieces.
- Toss carrots, oranges, and chopped nuts in a large bowl.
- Prepare the dressing by mixing olive oil, fresh lemon juice, salt and pepper. Pour dressing over salad and mix well.
- Sprinkle the salad with fresh mint leaves before serving. Serve chilled.
Carrot salad with cilantro and sesame seeds
Ingredients:
- 3 medium fresh carrots
- 2 tablespoons cilantro (finely chopped)
- 1 tablespoon roasted sesame seeds
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1 tablespoon vegetable oil
Step by step preparation:
- Cut carrots into thin slices or grate on a coarse grater.
- In a bowl, mix finely chopped cilantro and toasted sesame seeds.
- Prepare the dressing by combining rice vinegar, soy sauce, honey (if using), and vegetable oil.
- Pour the dressing over the carrots and cilantro, mix well.
- Serve the salad immediately or leave it in the refrigerator to chill before serving.
Carrot and apple salad with walnuts
Ingredients:
- 2 medium fresh carrots
- 2 sour apples
- 1/4 cup chopped walnuts
- 2 tablespoons Greek yogurt
- 1 tablespoon honey
- 1 teaspoon fresh lemon juice
Step by step preparation:
- Grate the carrots on a coarse grater.
- Cut apples into small cubes.
- In a large bowl, combine carrots, apples and chopped walnuts.
- Make the dressing by mixing Greek yogurt, honey and fresh lemon juice.
- Pour dressing over salad and mix well.
- Leave the salad in the refrigerator for a few minutes before serving.
Carrot and pineapple salad with ginger
Ingredients:
- 2 medium fresh carrots
- 1 fresh pineapple
- 1 teaspoon fresh grated ginger
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1/4 cup chopped cashews
Step by step preparation:
- Grate the carrots on a coarse grater or cut into thin slices.
- Cut the pineapple into small pieces.
- In a large bowl, mix carrots and pineapple.
- Prepare the dressing by combining grated ginger, rice vinegar and honey.
- Pour dressing over salad and mix well.
- Sprinkle the salad with chopped cashews before serving.
