Carrot-orange salad with mint and nuts

Ingredients:

  • 2 medium fresh carrots
  • 2 oranges
  • 1/4 cup chopped nuts (walnuts or almonds)
  • Fresh mint (to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Step by step preparation:

  • Peel the carrots and cut them into thin strips or grate on a coarse grater.
  • Pour hot water over oranges, then pat dry. Remove the zest from one orange and remove the segments from both. Remove the skin and cut the slices into small pieces.
  • Toss carrots, oranges, and chopped nuts in a large bowl.
  • Prepare the dressing by mixing olive oil, fresh lemon juice, salt and pepper. Pour dressing over salad and mix well.
  • Sprinkle the salad with fresh mint leaves before serving. Serve chilled.

Carrot salad with cilantro and sesame seeds

  • 1 tablespoon vegetable oil

Step by step preparation:

  • Cut carrots into thin slices or grate on a coarse grater.
  • In a bowl, mix finely chopped cilantro and toasted sesame seeds.
  • Prepare the dressing by combining rice vinegar, soy sauce, honey (if using), and vegetable oil.
