Stuffed peppers are a very tasty dish that many gourmets like. And although traditionally it is prepared with meat filling, you can also make vegetarian peppers or, for example, with cottage cheese. We at joy-pup offer several original recipes for stuffed peppers.

Stuffed peppers with meat and rice

Ingredients:

  • 6 large multi-colored peppers
  • 300 g minced meat (beef, pork or a mixture of both)
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 glass of tomato juice
  • 2 tbsp. spoons of tomato puree
  • 1 teaspoon Italian herb mixture
  • Salt, pepper to taste
  • 2 tbsp. spoons of vegetable oil

Step-by-step preparation:

  • Cut off the tops of the peppers and remove the seeds and membrane from the inside.
  • Heat vegetable oil in a frying pan and fry the onion and garlic until soft. Add minced meat and cook until golden brown. Salt and pepper to taste. Then add cooked rice and mix thoroughly.
  • Stuff each pepper with the meat and rice mixture, pressing the filling inside. Place the peppers in a deep baking dish.
  • Mix tomato juice, tomato puree, Italian herbs, salt and pepper. Pour this sauce over the stuffed peppers.
  • Cover the pan with foil and place in an oven preheated to 180 degrees for 30-40 minutes until the peppers are soft.
  • Serve the stuffed peppers hot, sprinkled with fresh herbs.

Stuffed peppers with quinoa

Ingredients:

  • 4 large multi-colored peppers
  • 1 cup quinoa, pre-rinsed
  • 1 onion, finely chopped
  • 2 carrots, grated on a coarse grater
  • 1 red pepper, finely chopped
  • 1 chicken egg
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • Salt, pepper to taste
  • 2 tbsp. spoons of olive oil

Preparation:

  • Trim the tops of the peppers and remove the seeds and membrane.
  • Heat olive oil in a deep frying pan. Fry onions, carrots and red peppers until soft. Add quinoa, add two glasses of water and cook until tender. Season with salt and pepper.
  • In a bowl, combine cooked quinoa with egg, cumin, turmeric, salt and pepper.
  • Place the peppers in a baking dish and begin to compact the prepared filling into them.
  • Place the pan in a preheated oven at 200 degrees for 25-30 minutes.
  • Garnish the finished stuffed peppers with fresh herbs and serve with a sauce of your choice.

Stuffed peppers with cottage cheese and herbs

Ingredients:

  • 6 young peppers
  • 300 g cottage cheese
  • 1 egg
  • 2 tbsp. tablespoons finely chopped herbs (dill, parsley)
  • Salt, pepper to taste
  • 2 tbsp. spoons of sour cream

Preparation:

  • Cut the tops off the peppers and remove the seeds.
  • In a deep bowl, mix cottage cheese, egg, chopped herbs, salt and pepper.
  • Fill the peppers with the filling
  • Place the peppers in a baking dish, brush them with sour cream on top and bake in the oven at 180 degrees for about 25-30 minutes.
  • Serve the finished stuffed peppers hot, sprinkled with fresh herbs.
