Pumpkin soup
Ingredients:
- 1 medium pumpkin
- 1 onion
- 2 cloves garlic
- 4 cups chicken or vegetable broth
- 1/2 butter
- Salt and black pepper to taste
- Cream for serving (optional)
- Greens and seeds for decoration
Step-by-step preparation:
- Cut the pumpkin into cubes and finely chop the onion.
- Fry the onion in oil until translucent, add garlic and pumpkin.
- Gradually add broth and cook until pumpkin is tender.
- Using a blender, puree the soup until smooth. Add salt and pepper to taste.
- Serve with cream, herbs and sprinkled with seeds.
Roasted pumpkin with honey and cilantro
Ingredients:
- 500 g pumpkin
- 2-3 tbsp. spoons of honey
- 2 tbsp. spoons of olive oil
- Salt and black pepper to taste
- Fresh cilantro for garnish
Step-by-step preparation:
- Cut the pumpkin into wedges and remove the seeds.
- Dip each pumpkin slice in honey and olive oil.
- Fry over medium heat until golden brown, season with salt and pepper.
- Serve pieces sprinkled with fresh cilantro.
Pumpkin bread
Ingredients:
- 2 cups pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups sugar
- Three 1/2 cups flour
- 2 teaspoons soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
Step-by-step preparation:
- In a bowl, combine pumpkin puree, eggs, oil and water.
- In another bowl, mix all dry ingredients.
- Gradually add dry ingredients to pumpkin puree mixture.
- Pour the batter into a baking tray or pumpkin shaped pan and bake at 175°C for about 60 minutes.
Pumpkin cupcakes with caramel cream
Ingredients for cupcakes:
- 2 cups of flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon soda
- 2 eggs
- 1/2 cup pumpkin puree
- 1/2 cup butter
- 1 cup of sugar
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
Ingredients for caramel cream:
- 1/2 cup butter
- 1 cup brown sugar
- 1/4 cup milk
- 2 cups powdered sugar
Preparation:
- For the cupcakes: Mix dry ingredients in one bowl and wet ingredients in another. Then combine them.
- Pour the batter into the muffin tins and bake at 180°C for about 20-25 minutes.
- For the caramel cream: Melt butter in a saucepan and add brown sugar and milk. Cook, stirring, until thickened.
- Cool the caramel cream and add powdered sugar.
- Top cooled cupcakes with caramel frosting and enjoy.
Pumpkin pie
Ingredients:
- 1 ready-made yeast-free pie dough
- 1/2 cup pumpkin puree
- 1 cup of sugar
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 3 eggs
- 1/2 cup butter
- 1 teaspoon vanilla extract
Preparation:
- Unroll the dough into the pie pan.
- In a large bowl, whisk together pumpkin puree, sugar, cinnamon, cloves, nutmeg, eggs, oil and vanilla extract.
- Pour the mixture onto the dough.
- Bake at 175°C for about 45-50 minutes or until done.
