Pancakes are a very tasty dish that will decorate any table. And they are especially interesting if you add interesting variations of fillings to them. We at joy-pup offer five of the most delicious vegetable fillings for pancakes, which are very easy to prepare.
Tomato and basil pancake filling

Ingredients:
- 2 large tomatoes, diced
- 1/2 cup fresh basil, finely chopped
- 2 cloves garlic, minced
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
Preparation:
- Fry the garlic in olive oil until golden brown.
- Add the tomatoes and cook over medium heat until the liquid has evaporated.
- Add basil, salt and pepper. Cook for another 2-3 minutes.
Mushroom pancake filling

Ingredients:
- 200 g champignons, chopped
- 1 onion, finely chopped
- 2 tbsp. spoons of vegetable oil
- 2 tbsp. spoons of soy sauce
- 1 teaspoon vinegar
Preparation:
- Fry onions and mushrooms in oil until soft.
- Add soy sauce and vinegar, cook for another 5-7 minutes.
Filling for pancakes with cauliflower

Ingredients:
- 2 cups cauliflower, chopped
- 1 teaspoon turmeric
- 1/2 cup coconut milk
- Salt and pepper to taste
Preparation:
- Fry the cauliflower with turmeric over medium heat.
- Add coconut milk and cook until vegetables are soft.
Eggplant pancake filling

Ingredients:
- 1 eggplant, cut into half circles
- 1 red pepper, chopped
- 1/2 cup feta, crumbled
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
Preparation:
- Fry the eggplants and peppers in olive oil until golden brown.
- Stir in feta, salt and pepper.
Asparagus pancake filling

Ingredients:
- 200 g asparagus, chopped
- 1/4 cup Parmesan, grated
- 2 tbsp. spoons of lemon juice
- 2 teaspoons olive oil
- Salt and pepper to taste
Preparation:
- Sauté asparagus in olive oil until soft.
- Sprinkle with Parmesan cheese, add lemon juice, salt and pepper.
