Cruffins are a delicious pastry that is a combination of a muffin and a croissant. They combine the flakiness of a croissant with a soft, fluffy interior to create a unique flavor and texture. Ingredients:
- flour – 500 g
- pressed yeast – 20 g
- egg – 1
- yolk – 2 pcs.
- sugar – 100 g
- milk – 150 ml
- butter – 50 g
- vanilla sugar – 1 sachet
- a pinch of salt
- powdered sugar for sprinkling.
For the dough:
- butter – 125 g
- raisins – 100 g
- candied fruits – 100 g
- dried cranberries or cherries – 100 g
Preparing the dough
1. Prepare the dough. In a large bowl, mix warm milk, yeast, 1 tbsp. l. sugar, 1 tbsp. l. flour. Cover the bowl with cling film and leave in a warm place for 15 minutes.
2. Prepare the egg-sugar mixture. In a deep container, mix the egg, yolks, sugar, vanilla sugar, and a pinch of salt. Beat the ingredients with a blender into a fluffy mass.
3. Add the egg-sugar mixture and 50 g of melted butter to the dough. Mix with a whisk until smooth.
4. Add flour to the resulting mass in several portions and knead the dough.
5. Take the dough out onto a flat surface and knead with your hands for 5 minutes.
6. Transfer the dough to a dry container, cover with cling film and leave in a warm place for 50-60 minutes until it rises and doubles its volume.
7. Pour hot water over dried fruits for 10 minutes. Then drain the water and cut into small pieces.
8. Divide the dough into 4 equal parts, form balls, cover with cling film and leave in a warm place for 10 minutes. Roll out each dough ball on a clean, lightly floured surface into a rectangle. Grease the surface of the dough with soft butter, sprinkle dried fruits and candied fruits on top.
9. Roll the dough into a roll, cover it with a clean, dry towel.
10. Cut the roll lengthwise, not all the way through.
11. Form a cruffin. Start twisting one end to the uncut side, and twist the other end as well. It is necessary to have an open cut at the top for a beautiful curly appearance.
12. Transfer the craffin into a paper form with a diameter of 9 cm.
13. Form all 4 cruffins in this way, cover them with a towel and leave in a warm place for 30 minutes.
14. Bake the cruffins in a well-heated oven at 180°C for about 30 minutes. Check readiness with a wooden stick.
15. When the cruffins have cooled completely, sprinkle them with powdered sugar.
