Pork chops

Ingredients:
- 4 pieces pork meat
 - 1 cup breadcrumbs
 - 1 cup flour
 - 2 eggs
 - 1 cup vegetable oil
 - Salt and pepper to taste
 
Step-by-step preparation
- Prepare pork chops, choosing meat without fat or membranes. Gently pound the meat with a wooden mallet to make it thinner and more tender.
 - Prepare three bowls: break the eggs in one and beat them. Place the flour in the second bowl and the breadcrumbs in the third.
 - Dredge each chop first in flour, then in egg and finally in breadcrumbs. Make sure the meat is evenly coated with each ingredient.
 - Heat vegetable oil in a frying pan over medium heat. When the oil reaches the desired temperature (you can test by throwing in a tiny crumb of breadcrumbs – if it starts to sizzle and float actively, the oil is ready), fry the chops for 2-3 minutes on each side until they are golden and crispy.
 - Place cooked chops on a paper towel to remove excess oil. Salt and pepper to taste.
 - Serve the pork chops hot with lemon and herbs and mashed potatoes, salad or other sides of your choice.
 
Chicken fillet chops

Ingredients:
- 4 chicken fillets
 - 1 cup crackers
 - 1 cup flour
 - 2 eggs
 - 1 cup vegetable oil
 - Salt and pepper to taste
 
Step-by-step preparation
- Prepare the chicken fillets by cutting them into thin strips and gently pounding them if necessary to make them more tender.
 - Repeat the same steps as for preparing pork chops: dredge the fillets first in flour, then in egg and then in breadcrumbs.
 - Heat vegetable oil in a frying pan and fry chicken chops for 2-3 minutes on each side until golden brown.
 - Place cooked chops on a paper towel to remove excess oil and season with salt and pepper to taste.
 - Serve the chicken chops hot with your choice of sauce, mashed potatoes or salad.
 
Eggplant chops

Ingredients:
- 2 large eggplants
 - 2 eggs
 - 1 cup breadcrumbs
 - 1 cup flour
 - 1 cup grated parmesan
 - 1 cup tomato sauce
 - 1 cup mozzarella (grated)
 - Salt and pepper to taste
 - Vegetable oil for frying
 
Step-by-step preparation
- Cut the eggplants into round slices about 1 cm thick. Salt them and leave them for 15-20 minutes to get rid of excess moisture.
 - Dip each slice of eggplant first in flour, then in egg and finally in breadcrumbs.
 - Heat vegetable oil in a frying pan and fry the eggplants on both sides until golden brown. Place them on a paper towel to remove excess oil.
 - In a preheated oven (180°C), place each slice of eggplant, first rolling it in tomato sauce, put a little grated Parmesan and mozzarella on it.
 - Bake the eggplant in the oven for 15-20 minutes until the cheese is melted and lightly browned.
 - Serve eggplant chops hot, sprinkled with fresh herbs.
 
Liver chops

Ingredients:
- 500 g beef or chicken liver
 - 1 cup flour
 - 2 eggs
 - 1 cup breadcrumbs
 - 1 onion
 - 2 cloves garlic
 - Salt and pepper to taste
 - Vegetable oil for frying
 
Step-by-step preparation
- Clean the liver from films and bile ducts, then cut it into small pieces.
 - Prepare the onion and garlic, chop them finely.
 - In a large bowl, combine liver, onion, garlic, eggs and flour. Season with salt and pepper.
 - Form the resulting mass into chops and roll them in breadcrumbs.
 - Heat the vegetable oil in a frying pan and fry the liver chops on both sides until golden brown (about 3-4 minutes on each side).
 - Place cooked chops on a paper towel to remove excess oil.
 - Serve the liver chops hot with your choice of sauce and mashed potatoes or vegetable side dish.
