Gazpacho soup is a Spanish dish that is served cold. It has a classic recipe, but it can also be modified. We at joy-pup offer several variations of gazpacho soup that you will definitely like.
Classic gazpacho
Ingredients:
- 6 tomatoes
- 1 cucumber
- 1 sweet pepper
- 1 onion
- 2 cloves garlic
- 4 tbsp. spoons of olive oil
- 2 tbsp. spoons of vinegar
- Salt, pepper to taste
- 1 liter of tomato juice
Step-by-step preparation:
- Cut all the vegetables into cubes and beat them.
- Toss them with tomato juice, olive oil and vinegar.
- Add salt and pepper to taste.
- Refrigerate the soup for at least 2 hours before serving.
Gazpacho with avocado and shrimp
Ingredients:
- 4 tomatoes
- 1 cucumber
- 1 red onion
- 2 cloves garlic
- 2 avocados
- 200 g shrimp (boiled and peeled)
- 1 lemon (juice)
- Fresh basil
- Salt, pepper to taste
Step-by-step preparation:
- Prepare a base of tomatoes, cucumber, onion and garlic, cutting them into cubes and grinding in a blender.
- Add chopped avocado and shrimp.
- Pour lemon juice and salt and pepper.
- Garnish with fresh basil before serving.
Strawberry gazpacho
Ingredients:
- 500 g ripe strawberries
- 1 kg tomatoes
- 1 cucumber
- 1 red onion
- 1 green pepper
- 2 cloves garlic
- 3 tbsp. tablespoons red wine vinegar
- 4 tbsp. spoons of olive oil
- Salt, pepper to taste
Step-by-step preparation:
- Combine chopped tomatoes, cucumber, onion, pepper and garlic, beat them.
- Add strawberries, vinegar and olive oil.
- Salt and pepper to taste.
- Chill in the refrigerator before serving.
Gazpacho with watermelon and mint
Ingredients:
- 1 kg tomatoes
- 4 mugs of watermelon
- 1 cucumber
- 1 red onion
- 2 cloves garlic
- 3 tbsp. spoons of lemon juice
- 2 tbsp. spoons of honey
- Fresh mint
- Salt, pepper to taste
Step-by-step preparation:
- Combine chopped tomatoes, watermelon, cucumber, onion and garlic and beat them.
- Whisk lemon juice and honey.
- Pour the mixture over the soup and add chopped mint.
- Place in the refrigerator for a couple of hours.
Spicy gazpacho with avocado
Ingredients:
- 6 tomatoes
- 1 cucumber
- 1 red onion
- 2 cloves garlic
- 2 avocados
- 1 green pepper (hot)
- 1 red pepper (sweet)
- 1 lemon (juice)
- 1 teaspoon Tabasco
- Salt, pepper to taste
Step-by-step preparation:
- Chop the tomatoes, cucumber, onion, garlic, avocado and peppers and beat them.
- Add lemon juice, Tabasco, salt and pepper.
- Mix thoroughly and refrigerate two hours before serving.
