Ingredients
For the test:
- 2 cups of flour
- 2 eggs
- A pinch of salt
For filling:
- 300 g spinach, finely chopped
- 250 g ricotta
- 100 g grated parmesan
- 1 clove garlic, minced
- Salt and pepper to taste
- Pinch of nutmeg
For the sauce:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 400 g tomato sauce
- Salt and pepper to taste
- Fresh basil for serving
Step-by-step spinach ravioli recipe
- In a large skillet over medium heat, saute the minced garlic in a little olive oil. Add chopped spinach and cook, stirring, until reduced and softened. Leave to cool.
- In a large bowl, combine ricotta, grated Parmesan, cooled spinach, salt, pepper and nutmeg. This will be your ravioli filling.
- In a bowl, mix flour and a pinch of salt. Make a well in the middle and add eggs. Knead the dough thoroughly until smooth. If the dough is too dry, add a little water. If too wet, add a little flour. Wrap the dough in film and leave to rest for 30 minutes.
- Divide the dough into several parts and roll each part into a thin sheet. Cut out square shapes using a special knife. Place a small amount of filling on one. Cover it with another shape and join the edges.
- In a large skillet over medium heat, heat the olive oil and sauté the minced garlic. Add tomato sauce and bring to a boil. Salt and pepper to taste. This will be your sauce.
- Boil salted water in a saucepan. Carefully lower the ravioli and cook for about 3-4 minutes, or until they float to the surface.
Drizzle the tomato sauce over the ravioli and garnish with fresh chopped basil.
