Pumpkin soups: simple recipes for every day 1

Ingredients:

  • 1 medium pumpkin (about 1.5 kg), peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 tbsp. spoons of olive oil
  • 4 cups vegetable broth
  • 1 cup cream (optional)
  • Salt and black pepper to taste
  • Parsley for decoration

Step-by-step preparation:

  • Heat olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.
  • Add the chopped pumpkin and fry it for another 5-7 minutes.
  • Gradually add the vegetable broth and bring the soup to a boil. Then reduce the heat and simmer, covering the pan, for about 15-20 minutes, until the pumpkin is tender.
  • Using a blender, puree the soup until creamy.
  • Add cream, salt and pepper if desired. Stir and heat the soup until ready.
  • Serve the soup garnished with fresh parsley.

  • 1 medium pumpkin (about 1.5 kg), peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 piece fresh ginger (about 5 cm), chopped
  • 1 tbsp. spoon of turmeric
  • 1 tbsp. spoon curry
  • 1 can (400 ml) coconut milk
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Coriander and coconut flakes for garnish

Step-by-step preparation:

  • In a large saucepan, heat the olive oil and sauté the onion, garlic, and ginger until softened, about 5 minutes.
  • Add pumpkin, turmeric and curry. Fry for another 5 minutes.
  • Gradually add vegetable broth and bring to a boil. Then reduce the heat and simmer, covered, for about 20 minutes until the pumpkin is soft.
  • Add coconut milk and cook until soup is done.
  • Add salt and pepper if desired. Serve the soup garnished with coriander and coconut flakes.

  • In a large saucepan, heat the olive oil and sauté the onion and garlic until softened, about 5 minutes.
  • Add the chopped pumpkin and fry it for another 5-7 minutes.
  • Gradually add the vegetable broth and bring the soup to a boil. Then reduce the heat and simmer, covered, for about 15-20 minutes until the pumpkin is soft.
  • Using a blender, puree the soup until it has a smooth texture.
  • Add cream cheese and cheddar. Stir until the cheese is completely dissolved and heat the soup.
  • Serve soup sprinkled with crispy crumbs.
