  • 1 cup buckwheat
  • 2 glasses of water
  • 1 cucumber
  • 1 tomato
  • 1 sweet pepper
  • 1 small onion
  • 1/4 cup fresh herbs (dill, parsley or basil)
  • 2-3 tablespoons vegetable oil
  • 1-2 tablespoons of vinegar or lemon juice
  • salt and pepper to taste

Instructions:

  • Rinse buckwheat in cold water. Then pour 2 cups of water and put on fire. Bring to a boil, then reduce heat and cook over low heat for about 15 minutes until tender. Let sit for 5-10 minutes and then drain in a colander to remove excess liquid.
  • Peel the vegetables and cut them into cubes. Onions can be cut into rings.
  • Mix buckwheat and vegetables in a large bowl.
  • Add fresh herbs, vegetable oil, vinegar or lemon juice, salt and pepper to taste.
  • Mix well and let the salad sit for 10-15 minutes for the flavors to meld.
  • Serve the buckwheat salad cold.

Step by step preparation:

  • Roast the nuts in a hot skillet until they are fragrant. Leave them to cool, then chop.
