Ice cream with melon and mint
Ingredients:
- 2 cups chopped melon (no skin or seeds)
- 1/2 cup sugar
- 1 cup cream
- 1 teaspoon vanilla extract
- 2 tablespoons fresh mint (chopped)
Step by step preparation:
- In a blender, mix the chopped melon and sugar. Grind until you get a puree.
- Add cream and vanilla extract to melon puree. Stir until a homogeneous mass is obtained.
- Pour the mixture into an ice cream maker and freeze according to instructions.
- Sprinkle with fresh mint before serving.
Melon charlotte
Ingredients:
- 4 cups chopped melon (no skin or seeds)
- 3 eggs
- 1 cup of sugar
- 1 cup flour
- 1 teaspoon baking powder
- A pinch of salt
- Powdered sugar for decoration
Step by step preparation:
- In a bowl, beat eggs with sugar until fluffy.
- Add chopped melon and stir gently.
- Gradually add flour, salt and baking powder to the dough, mixing until a homogeneous dough forms.
- Pour the batter into a baking dish and bake at 180°C for about 40-45 minutes, or until the charlotte is golden and dried out.
- Sprinkle the finished charlotte with powdered sugar before serving.
Melon fritters
Ingredients:
- 2 cups chopped melon (no skin or seeds)
- 1 egg
- 1/2 cup milk
- 1 cup flour
- 2 tablespoons of sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Vegetable oil for frying
Step by step preparation:
- In a bowl, beat the egg with milk and sugar.
- Add chopped melon and mix well.
- Gradually add flour, baking powder and cinnamon, mixing until smooth.
- Heat up a frying pan with vegetable oil.
- Spoon the batter into the skillet and fry until golden brown on both sides.
- Set aside on paper towel to get rid of excess oil.
- Serve warm, sprinkled with sugar or with maple syrup.
Melon salad
Ingredients:
- 4 cups chopped melon (no skin or seeds)
- 1 cucumber (sliced)
- 1 red onion (thinly sliced)
- 200 g feta (cut into cubes)
- 1/4 cup mint leaves
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Step by step preparation:
- In a large bowl, combine chopped melon, cucumber, red onion and feta.
- Add mint leaves.
- In a small bowl, mix lemon juice, olive oil, salt and pepper.
- Pour this dressing over the salad and toss gently.
- Serve immediately to keep fresh and crunchy.
