Ice cream with melon and mint

Ingredients:

  • 2 cups chopped melon (no skin or seeds)
  • 1/2 cup sugar
  • 1 cup cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh mint (chopped)

Step by step preparation:

  • In a blender, mix the chopped melon and sugar. Grind until you get a puree.
  • Add cream and vanilla extract to melon puree. Stir until a homogeneous mass is obtained.
  • Pour the mixture into an ice cream maker and freeze according to instructions.
  • Sprinkle with fresh mint before serving.

Ingredients:

  • 4 cups chopped melon (no skin or seeds)
  • 3 eggs
  • 1 cup of sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • Powdered sugar for decoration

Step by step preparation:

  • In a bowl, beat eggs with sugar until fluffy.
  • Add chopped melon and stir gently.
  • Gradually add flour, salt and baking powder to the dough, mixing until a homogeneous dough forms.
  • Pour the batter into a baking dish and bake at 180°C for about 40-45 minutes, or until the charlotte is golden and dried out.
  • Sprinkle the finished charlotte with powdered sugar before serving.

Step by step preparation:

  • In a bowl, beat the egg with milk and sugar.
  • Add chopped melon and mix well.
  • Gradually add flour, baking powder and cinnamon, mixing until smooth.
  • Heat up a frying pan with vegetable oil.
  • Spoon the batter into the skillet and fry until golden brown on both sides.

  • 2 tablespoons olive oil
  • Salt and pepper to taste

Step by step preparation:

  • In a large bowl, combine chopped melon, cucumber, red onion and feta.
  • Add mint leaves.
  • In a small bowl, mix lemon juice, olive oil, salt and pepper.
  • Pour this dressing over the salad and toss gently.
  • Serve immediately to keep fresh and crunchy.
