Ingredients:
- Cottage cheese – 200 g
- Egg – 1 pc.
- Flour – 3 tbsp.
- Sugar – 1-2 tbsp. (to taste)
- Salt – a pinch
- Baking powder – 0.5 tsp.
- Berries (raspberries, strawberries or blueberries) — 100 g
- Honey — for serving
- Vegetable oil — for frying
Step-by-step preparation:
- Mash the cottage cheese with a fork or blender until smooth.
- Add the egg, sugar, a pinch of salt and baking powder, mix.
- Gradually add flour, kneading a thick dough.
- Heat the frying pan with a little oil. Spoon the dough, forming pancakes.
- Fry the pancakes on each side for 2-3 minutes until golden brown.
- Serve the pancakes with berries and pour honey for sweetness.
Curd smoothie with banana and spinach
Ingredients:
- Cottage cheese — 150 g
- Banana — 1 pc.
- Spinach – 1 handful
- Milk or almond milk – 150 ml
- Honey – 1 tbsp
- Flax seeds – 1 tsp (optional)
Step-by-step preparation:
- Put cottage cheese, chopped banana and spinach in a blender bowl, add milk and honey.
- Whisk everything until smooth.
- Pour the smoothie into a glass, garnish with flax seeds if desired.
Cottage cheese casserole with raisins
Ingredients:
- Cottage cheese – 500 g
- Eggs – 3 pcs.
- Sugar – 3 tbsp
- Semolina – 2 tbsp
- Baking powder – 1 tsp
- Raisins – 50 g
- Vanilla sugar – 1 tsp
- Sour cream – 2 tbsp (for serving)
Step-by-step preparation:
- Mash the cottage cheese and mix with eggs, sugar, vanilla sugar and semolina.
- Add baking powder and knead the dough. Leave it for 10 minutes so that the semolina swells a little.
- Pre-soak the raisins in hot water for 5-10 minutes, then squeeze and add to the curd mass.
- Preheat the oven to 180°C. Put the curd mass in a greased form.
- Bake the casserole for about 40 minutes until golden brown.
- Serve with a spoonful of sour cream or fresh berries.
