Dolma is considered one of the most delicious and original dishes. It is somewhat similar to cabbage rolls, but it uses grape leaves instead of cabbage leaves. We at joy-pup tell you how to cook delicious dolma with beef.

Ingredients:

  • 1 kg ground beef
  • 1 kg grape leaves
  • 1 large onion, finely chopped
  • 1 cup cooked rice
  • 3-4 tablespoons olive oil
  • Juice of two lemons
  • 2 tablespoons tomato puree
  • 1 bunch of parsley, finely chopped
  • 1 bunch of dill, finely chopped
  • Salt and pepper to taste
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 3-4 cups boiling water

Step-by-step preparation:

  • First prepare the filling. To do this, in a large bowl, combine the ground beef, finely chopped onion, rice, chopped parsley and dill. Add coriander, cumin, turmeric, paprika, salt and pepper to taste. Also add two tablespoons of olive oil and stir well until all ingredients are evenly combined.
  • Pre-soak fresh grape leaves in boiling water for a few minutes to soften them.
  • Take one grape leaf and place it face down on your work surface. Remove the vein from the bottom of the leaf to make it more flexible.
  • Place a small amount of filling on each sheet, then carefully roll it into a log shape, starting at the edge where there is no vein. Make as many dolmas as you want.
  • Pour olive oil into the bottom of the pan. Lay the dolmas in one layer. Pour tomato puree and lemon juice diluted in a glass of boiling water over them.
  • Place the pan over medium heat and bring to a boil. Once boiling, reduce heat to low, cover and cook for about 1.5-2 hours.

Serve dolma with parsley and sour cream.
